Westward Rum Cask
Westward Rum Cask, a whiskey finished in our house-made rum barrels, began as all other Westward casks do – with 100% malted barley and American ale yeast, and a slow, low fermentation for maximum flavor. The whiskey then aged at Westward’s warehouse in a new, lightly charred American Oak barrel for nearly four years before the barrel began to leak. In search of a new aging vessel, Westward’s team of distillers repurposed two empty Katun Rum casks. But the temporary ‘relocation’ proved to be a delicious one, as Katun’s signature roasted fruit notes paired perfectly with Westward’s baking spice characteristics, and so the whiskey aged an additional year and a half, before bottling in March, 2019.
